Chicken Stew

Chicken Stew……blend of flavors from tomatoes, red pepper, grilled chicken and few other spices. It goes very well with bread slices and white rice as well. Any choices of veges such as carrot, cauliflower and celery can be added as preferred. This one pot concept make our cooking task much easier and tastier.
Ingredients :
- 300-400gm chicken breast (cubed)
3 Tablespoon butter
2 Bay leaves
1 Yellow Onion (chopped finely)
4 Cloves garlic (chopped finely)
1 Red pepper (cubed)
1 Can of cubed tomatoes/ whole peeled tomatoes
2 Cup hot water/chicken stock
Pinch of dried thyme leaves
Pinch of dried basil leaves (optional)
Salt to taste
Dash of white pepper
Dash of crushed black pepper
Garnishing – some chopped fresh coriander
Let’s make the Stew :
Prepare the required ingredients.
It’s optional to use either a can of diced tomatoes or whole peeled tomatoes.
Any portion of chicken meat can be used in this recipe.
Chop finely the yellow onion and garlic.
Cube the red pepper.
Heat 1 tablespoon of butter in a pan. Start to grill/ fry the chicken pieces in medium heat for a 1-2 minutes. Sprinkle little white pepper powder and salt on the chicken pieces. Once the chicken is cooked and has it’s grill (burned) effect, remove it from pan and keep aside.
Using the same pan, heat up 2 tablespoon of butter. Start sauteing the chopped onion, garlic and bay leaves. Saute the onion and garlic till it become translucent and has some nice aroma.
Keep medium heat.
Add in the cubed red pepper. Saute it for about 2-3 minutes together with onion and garlic. The red pepper pieces should turn to a little soft texture while sauteing.
Then add in the tomatoes from the can. Let it cook for further 1-2 minutes.
Add in the spices. Salt to taste, dash of crushes black pepper, pinch of white pepper powder, pinch of dried thyme and basil. Give a good stir and let the spices cook for a while.
Then add in the cooked chicken pieces.
Note : You may add in about 1/2 teaspoon of chili powder or paprika for further hot and spicy stew flavors too.
Add in about 2 cups of hot water/ chicken stock. It is suggested to use chicken stock, as it will further enhance the taste of this juicy stew. Keep in low heat . Close the pan with lid and let the stew simmer for about 30 minutes. The veges should comes to a very soft and tender texture. The sauce of the stew should be in semi thick consistency.
Adjust the flavor/salt as needed.
Off the heat once the stew is cooked well. Add in some chopped fresh coriander.
It’s done, juicy, full of flavor and refreshing Chicken Stew.
