Grill and Oven Roasted Chicken

Grill & Oven Roasted Chicken…simply delicious. This grill & oven roasted chicken piece will make your dinner plate complete. The marination ingredients and duration of marination makes this particular chicken grill a perfect piece for us. This recipe can be used for indoor grill, oven roast and BBQ as well.
Ingredients :
3 Chicken piece (preferably thigh piece)
2 Tablespoon mayonnaise
1 Teaspoon chili powder (or 2 teaspoon)
1 Tablespoon soy sauce
2 Clove garlic & 2 cm ginger (paste)
Some white pepper powder (1/4 Teaspoon)
Some crushed black pepper (1/4 teaspoon)
1 Tablespoon honey – optional sugar
1 Teaspoon Salt
Juice from 1/2 lime
1 Tablespoon olive oil
Some finely chopped fresh coriander leaves
Let’s Roast the Chicken :
Prepare the required ingredients.
Note : Above ingredients qty can be adjust based on individual preferences (eg : honey, chili powder, salt).
I used chicken thigh pieces ( deboned – as chicken chop piece). Without the bone, the meat will be tender and easy to grill, oven roast or BBQ.
Pre-mix the sauces. Soy sauce, mayonnaise, honey, salt, chili powder.
Make paste of garlic and ginger (can use mortar and pestle).
Chop the fresh coriander leaves.
Juice from 1/2 lime.
In a marination bowl, add in all the ingredients together. Mix them well. Ensure the marination been coated the chicken piece completely. Keep the marination minimum 4-6 hrs ( in refrigerator or overnight marination in freezer compartment). The longer the marination, tastier the chicken will be.
Step 1 :
Use a grill pan or any pan from your kitchen. Keep medium heat.
Add 1 teaspoon butter and let it melt. Start grill the chicken piece. 1-2 minutes each side.
Don’t have to completely cook the chicken here. Just give the “grill outlook” on the chicken piece will do.
Now transfer the chicken pieces to a tray
A tray to roast the chicken later.
Pre-heat the oven, top and bottom heat, 200 Celcius.
Step 2 :
Roast the chicken piece in 200 Celcius for 15 minutes will do. Since we have grill the chicken surfaces earlier, then the chicken will be cooked little quick in the oven.
Note : Wired rack would be suggested for this oven roast step, so that both side of the chicken been roasted evenly.
It’s Done. Juicy,tender and yummy chicken grill.
Served with homemade Mashed Potatoes and Coleslaw.
