In a deep pan, heat up the butter/oil. Start sauteing the chopped shallots & garlic for 1 minute. Then add in the minced chicken and saute in the hot butter for a while.
Add in the sliced button mushrooms and some salt. Give a good mix and cook for a while.
Once the minced chicken is cooked, add in the pasta sauce and the red capsicum. Add in some hot water/ chicken broth( 1-2 cup), depending on the sauce qty needed. Season the sauce with dash of black pepper and white pepper.
In medium-high heat, let the sauce to boil and simmer.
1 tablespoon of plain flour, mix and dilute with little water. Pour in the flour mixture into the spaghetti sauce. Let the sauce to simmer and get thicken. Throw in some chopped coriander (optional).
Taste check and adjust the seasoning as needed.
Once done, off the heat.
In a pot, boil some water and add about 1 tablespoon salt. Once the water is roll boiling, slowly add in the spaghetti noodles. Stir occasional only.
Note : Tips to check the salt in the water. Taste the water, it should taste little salty. If you don’t taste the salt at all, then add a bit more. The spaghetti will be tasteless, if it is cooked with no salt taste at all in the boiling water. Do not add too much salt as well. The key here is “medium salt in boiling water”.
It will take about 5-8 minutes for the spaghetti to cook well.
Once the spaghetti noodle cooked well, drain the water off. Transfer the spaghetti noodle to a another bowl. Add 1 tablespoon of butter. Give a good mix. Let the butter melt and coat the spaghetti noodles well.Note : Adding little butter/ margarine will ensure the cooked spaghetti noodle doesn’t stick to each other.
Once the spaghetti noodles and the sauce is ready, serve them with desired presentation.
Enjoy the delicious spaghetti at home.
