roti jala ingredientsPrepare the required ingredients.

Evaporated milk or coconut milk can be used to make roti jala. The purpose of turmeric powder is just to give some curry flavor in the roti jala itself. I use yellow coloring in this recipe. Nowadays there were many colors roti jala been cooked, so cook it with color of your preference.

prepare roti ingredients

In a large bowl, add in flour, evaporated milk, egg, sugar, salt, turmeric powder and yellow coloring. Use hand whisk to mix them well. Then slowly add in 3 cups of water, whisk all the ingredients together for about 1 minute.

Keep the additional 1/4 cup water aside for later use.

blend roti jala batter

Then pour in the mixture into the food processor. If there is lumps, do not worry, the food processor will help us do the perfect job for us here. Blend the mixture for 1 minute or till the smooth consistency been formed.

roti jala preparation

The look of the smooth running mixture as in picture. Add in additional food coloring if required.

Check the consistency of the roti jala batter first. Fill the mould with some roti jala batter and hold them higher a bit. It should be on running consistency (like thread). If the mixture is dropping unevenly, it means it’s too thick.

roti jala making method

Add in additional water (few tablespoon). Do not add too much water all together while deciding the consistency of the mixture. Based on my experiences, we need 3 cups + 1/4 cup (or little lesser) water for overall mixture.

Tips : Always keep/hold small bowl in the bottom of the roti jala mould to avoid the mixture messy the stove top everywhere.

Heat the pan (thava) and brush some oil on it. Use low heat only. I use pandan leaves to grease the oil on the hot pan, as the frangrance from the leaves will enhance the flavor of roti jala. Use the roti jala mould, scoop some batter and start pouring them by making the swirl shapes we preferred. In low heat, it take about 1 minutes for the roti jala to cook. When the bottom turn to little brown, remove them from pan.

methods to fold roti jala

Place the cooked roti jala in a flat base or tray as in picture.

Tips : to make crispy roti jala, spray/sprinkle some oil on top of roti jala while cooking them. The oil will make it crispy a bit.

folding roti jala

Fold and roll them in desired sizes. Some prefer to fold the roti jala in triangle shapes as well.
