Basic Puff

Soft and firm puffs…..definitely is everyone’s favorite. Most of us would have thought it’s complicated to make those puff. Nope, it’s really easy to make and bake them at home. Bake the puff and fill them up with any of your favorite sweet or savory fillings.
Recipe for 40 – 46pcs puffs
Ingredients :
- 2 Cup water
- 1 Cup butter/margarine
- 2 Cups flour
- 3/4 Teaspoon salt
- 6 Eggs
- 1 Teaspoon vanilla essence
Let’s make the puffs :
Prepare ingredients as required. In this recipe I used salted butter and grade B eggs. It’s optional to use margarine.
Piping bag, nozzle.
Boil the water in a pan, on medium heat. Once the water starts to boil, add in the butter and let it melt completely. Add in the salt as well. Slow down the heat to low.
Keep the heat very low. Slowly start adding the the flour in the butter mixture. Keep stirring for about 5-6 minutes.
The ball look alike dough will be formed. Off the heat. Let the dough completely cooled down.
Once the dough cooled down, transfer them to a bigger bowl. I used hand mixer for this process. Add in the vanilla essence. Then add in the eggs 1 by 1. Use low speed, beat the eggs together with the sticky dough.
It will take about 5-6 minutes for the dough and the eggs to completely mix and blend well . Smooth, thick and sticky dough is ready for the puff.
Using low capacity hand mixer may be tough to do this job, since the dough is thick and sticky. So handle them carefully. Might need to On and Off the mixer frequently.
Fill in the puff dough into the piping bag as in picture. If you don’t have the piping bag or the star nozzle, you may just use spoon to scoop up the dough and place it on the baking tray and start baking.
Grease the baking tray with some butter.
Pre-heat the oven 200 Celsius, for 10 minutes, with top and bottom heat.
In a greased tray, start piping the desired shapes. The shape of the puff is your choice.
Bigger, mini or curled.
Bake the puff for 25-30 minutes, till it’s golden brown in color. Well, the baking steps is most important step for a perfect puff. The heat must be consistence, 200 Celsius. Once done baking, let the puff stay in the oven, with the oven door open ajar (slightly open) for 5 minutes. This techniques, will ensure the puff stay rise well (doesn’t drop flat back).
