Masala Vadai

Masala vadai is a popular snack among Indian community. In any traditional celebrations, vadai is one of the snack that we would prefer to have. Even it would be a good idea to have it as a breakfast or an evening tea time snack. Easily prepare within the ingredients available at home. Make our own at home and let our young generation grow without forgetting our traditional snacks.

 

 

Serves 20-25 pieces

Ingredients :

  • 300gm – Kadalai parrupu (channa dhal)
  • 1 cm fresh ginger
  • 1 Clove garlic
  • 1 Teaspoon fennel seeds

Other spices :

  • 1 Medium sized onion (chopped finely)
  • 1/2 Green Chili (chopped finely)
  • 1/2 Red Chili (chopped finely)
  • 1 Stalk curry leaves (sliced finely)
  • 2 Teaspoon salt (or more as required)

Let’s cook the vadai :

Prepare the ingredients as required.

Pre-soak the kadalai parrupu (dhal) for minimum 3-4 hours.

Type of  chilies been use is optional, either red chili or green chili. For this recipe, I only use half of each chili. Wouldn’t want to over crowded the vadai with chilies.

Drain the water from dhal. Reserve about 3-4 tablespoon of soaked dhal, separately first. Balance of the dhal to be placed in a grinder (food processor). Together, add in garlic, ginger and fennel seeds. Grind them finely as a smooth paste, without adding any water.

In a mixing bowl add in the grounded dhal paste, chopped chilies and onions, finely sliced curry leaves, salt and coarsely pounded fennel seed. Don’t forget to add in the reserved soaked dhal as well.

Give a good mix all the ingredients together. Taste check. Add in salt if required.

Scoop a small amount of  the mixture and make a round shape as in a picture. You may use your palm, a piece of banana leaf or a small piece of plastic wrap to  make the round shape of the mixture. Flatten them well.

Heat the wok or deep frying skillet with cooking oil. Medium heat.

Start the frying process. Flip over the vadai about 3 times. Fry it’s till it turns nice golden brown. Once the oil bubble is getting lesser, remove the vadai from pan and place it in a tray lined with kitchen tissue to drain the excess oil . Repeat the process till you finish frying all the mixture.
