Crispy French Fries

Enjoy the homemade French Fries with your family and friends. Worried to serve fries bought from fast food outlets or from stores? Then lets start to prepare our own homemade fries. We can prepare it in advance, keep it frozen and fry it whenever we wish to have some fries for our kids and family.
Ingredients and methods, as below :
Wash and dry the potato
Peel the skin off.
Using a sharp knife, make the slices as thin or thick as your preference. Suggested 1 cm – 1.5 cm thickness. Ensure all the slices are about the same thickness.
In a larger pan, boil some water and add in about 2 teaspoon of salt ( there should be some saltiness in the boiling water). So adjust the salt measurement according to the pot and water level.
Add in the sliced potatoes into the boiling water. Let the potatoes cook for about 5 minutes. Use tooth picks and check the boiling potatoes. It should be half cooked only. Drain the water and let the potatoes rest about 5 minutes.
Add 2 tablespoon of cornflour and mix well with the half cooked potatoes. Cover the bowl of potatoes and keep it in the freezer for about 15 minutes or longer ( this is to ensure the potatoes are cooled down and set well before the frying process). Before frying, add 1 tablespoon of cornflour and mix well.
In a frying pan, pour in required cooking oil and heat it. The oil should be hot enough before start frying. Fry the potatoes until it turns golden brown.
Tips : You may add in some salt into the hot oil as well. It will enhance the crispiness of the fries. Or sprinkle the fine salt, after removing the fries from the frying pan.
Note :
- Do not overcook the potatoes slices in the boiling water (half cook only). Do not add too much of salt at this stage as well.
- You may use double frying method as well ( fry 1st 3 minutes, remove from wok, let it cool, then fry again till golden brown ).
- For frozen fries – after mixing the potato slices with corn flour, you may keep it in airtight container and refrigerated it for future frying.
