Carrot Walnut Cake



Carrot Walnut Cake. Simply delicious in taste with lots of grated carrot and walnuts, added flavor with little cinnamon and fresh lemon zest. This carrot walnut cake will be more delicious when we top it up with some homemade creamy icing on it.

Baking Pan, Square  7×7 inch 0r 8×8 inch. Baking 40-45 minutes, 175 celcius.



Ingredients :

  • a) 280gm Butter
    240gm Castor sugar
    Pinch of salt
  • b) 4 Eggs (Grade A/B)
    1/2 Teaspoon vanilla essence
  • Sift together :
    c) 240gm All purpose flour (tepung gandum)
    1 Teaspoon baking powder
  • d) 1/2 Cup walnut (chopped)
    Pinch of cinnamon powder
    150gm grated carrot (2 small carrot)
    2 Teaspoon lemon juice (or zest of lemon)

Let’s Bake the Carrot Cake :


Prepare the required ingredients.

Walnuts can be replaced with any other dried nuts or grounded nuts.

Either fresh lemon juice or  zest of lemon can be used.




Carrot to be grated finely.

Chop the walnut coarsely.

Sift the flour together with baking powder.




In a large bowl, beat the butter and sugar till light & fluffy.
Use electric mixer for better creamy texture. Beat for about 5-6 minutes.

Start adding the egg 1 by 1 and beat it with low speed only. DO NOT over beat/ cream at this step. Beat the batter for about 1-2 minute will do.




Add in the flour, baking powder, cinnamon powder. Use spatula to fold in the mixture well. Do Not use mixer at this step. Just use spatula will do.





Now start adding the grated carrots, chopped walnuts, vanilla essence and fresh lemon juice/ zest.

Use spatula to fold in and mix the ingredients well.





Preheat the oven 175 Celsius, top and bottom heat.

Prepare baking pan, lined with baking paper. In this recipe, I used 7×7 inch square pan. Optional to used 8×8 inch baking pan.




Pour in the cake batter into the baking pan. Start baking it with 175 Celsius, for about 40-45 minute

It takes little longer to cook the cake, for 7×7 inch baking pan (45-50 minutes).
If used larger baking pan ( 8x8inch) then the cake will be baked little faster, within 40 minutes.



Done. Carrot walnut Cake.
Let the cake cool down completely, before top it up with creamy icing.






Ingredients for Icing Topping :
150gm icing sugar
2 Tablespoon butter
1-2 tablespoon milk
1 Teaspoon lemon juice/ some zest of lemon



Beat the ingredients for icing topping,
Icing sugar, butter, 1-2 tablespoon milk (as needed only) and lemon juice. Beat it till it’s turn to be creamy and fluffy.

Note : If the icing texture is very stiff, then add milk, little by little, till it reach the right consistency (to spread on the cake later).

Then start applying it on top of the cake, as preferred.
