Yogurt & Veges Gravy

Mor khudhu in tamil or we can call it Yogurt & Veges Gravy. Very mild in flavor, light in texture and delicious in taste. A quick recipe with less spices and ingredients. Any veges can be include in this gravy, as per your preferences. No onion, ginger or garlic needed as our usual way of preparing gravy at home. It’s an easy to do vegetarian dish.
Recipes serves 3-4 person
Ingredients :
- 1 Tablespoon oil (or less)
- 1 Medium size bottle gourd/labu air
- 1 Large carrot
- 1/2 Cup yogurt (less sour/store bought)
- Hot water as needed
Blend to paste :
- 1/2 cup of grated coconut
- 1/2 Teaspoon fennel seeds
- 2 Green Chili
Tempering :
- 1 Tablespoon oil
- 1 Teaspoon kadugu/ mustard seeds
- 1/2 Tablespoon urad dhal/ulunthu (optional)
- 2-3 dried chili
- 2 Stalk curry leaves
Let’s cook the yogurt gravy :
Prepare the required ingredient.
Bottle gourd/labu air and carrot, peel off the skin and cubed to small sizes. It’s suggested to use mild (less sour) yogurt/store bought.
In a pan, heat up 1 tablespoon (or less) oil. Start sauteing the carrot and bottle gourd for a minute.
Add in little salt and 1/4 cup water , close the pan with lid. Cook them for about 5 minutes or till the veges are soft.
Meanwhile, use food processor to grind to paste the grated coconut, green chilies and fennel seeds with little water.
Once the veges been almost cooked (soft), add in the coconut-chili paste. Give a good stir and cook them in simmer (2-3 minutes). Add some hot water, as per the gravy needed (about 1 cup). Now, reduce the heat to low and add in yogurt. Do not cook the yogurt for too long. Just bring to boil for 1 minutes will do. Taste check, add salt if need. Off the heat.
In another pan, heat up 1 tablespoon of oil. Add in mustard seeds, urad dhal and dried chilies. Let it sizzle. Off the heat. Now add in the curry leaves. Immediately transfer them to the yogurt gravy.
Note : Off the heat, then only add in the curry leaves. It will still sizzle in the hot oil but the curry leaves color and the flavor will be retained.
Add in the fried spices and give a quick stir with the yogurt gravy. It’s done.
Delicious Yogurt & Veges gravy is ready.
