Simply Tasty Spring Rolls. In Malaysia, we call it as Popiah Goreng. There were many version of filling available, I made and fry the Spring Rolls with sengkuang/ yam bean filling. The right choice of spring roll wrappers is equally important, which will determine the crispiness of the fried spring rolls. We can prepare the rolls ahead, keep it in airtight container and store them in freezer. Fry the rolls whenever we prefer to have it at home.
Recipe serves : 16 to 18 rolls
Ingredients :
- 1 Large Sengkuang/Yam Bean
- 1 Medium size carrot
- 1 Small size onion
- 3-4pcs fresh prawns
- 1 Red chili
- A pinch of white pepper
- Salt to taste
- Some chopped spring onion leaves
- 2 Tablespoon cooking oil (sauteing)
Let’s Prepare the Yam Bean Filling :
Prepare the required ingredients. Sengkuang /yam bean and carrot to be skin off, washed and shredded to thin slices. Clean the fresh prawns and chopped it finely. Onion, chili and spring onion to be chopped finely.
Note : Fresh prawns can be substituted with dried prawns, about 1 tablespoon (soaked in water a while, drain the water and pound them well till fine paste.
Heat up the cooking pan with 1-2 tablespoon of oil. Start sauteing onion for 1 minute. Then add in the chopped prawns and fry them for a while. Add in shredded carrots and chopped chili, give a quick stir and cook them for about 1 minute.
Now add in the shredded sengkuang /yam bean, pinch of white pepper and salt as per taste. Give a good stir all together. Let them cook well, till the carrots and sengkuang turn to be soft and tender or till the excess water from veges comes to dry. For about 10 minutes.
Option to use oyster source for seasoning purpose. Once done, off the heat.
Get ready with spring roll wrappers (I used store bought spring roll wrappers).
Place 1-2 tablespoon of cooked filling and roll them once first.
Then fold the wraps left to right as in picture.
Brush some water at the edge of the spring roll and roll it till end. Ensure that the wraps are intact.
Option : to use flour mix (little flour and water) and brush them at the edge of the rolls, as substitute to use water.
To avoid sticking each other, sprinkle some flour in between, while stacking up the rolls.
Heat up some cooking oil – medium heat.
Start frying the rolls, till it’s crispy and golden in color. It will take about 2-3 minute. Once done, remove the spring rolls and place it on kitchen tissue.
