Custard Cream Filling

I used to buy the instant custard powder from shops and cook it to make the filling for the puffs. But there were times the shop are closed or the custard packet is out of stock. Now, I never worried about my desired custard cream anymore, as I learned to make my own. Few trial and errors, but manage to get almost similar taste and texture as per the instant custard bought from shops. It’s really cost saving and super easy to do.
Recipe yield for 40 pieces puffs.
Ingredients :
- 400ml – Milk (full cream)
- 100ml – Water
- 8 Tablespoon castor sugar (or add more)
- 6 Tablespoon corn flour
- 3 Tablespoon custard powder
- A pinch of salt
Let’s make the Custard Cream :
Prepare the ingredients as required.
Milk and water qty should be in total 500 ml. It’s your choice to decide the ratio. More milk, the more creamier the taste will be. If you run out of milk stock, don’t worry, just increase the water qty. Sugar qty can be increased to additional 1-2 tablespoon, if you prefer more sugary taste.
Pour the milk in a pan. Heat not required for this process. Start adding the ingredients, sugar, corn flour, custard powder and a pinch of salt. Stir them well, corn flour and custard powder should be diluted well in the milk without any lumps.
Now, on the heat (low fire). Keep stirring for about 3 minutes. The liquid mixture, will turn to more consistent custard cream texture, as in picture. Off the heat. Keep stirring them well, without heat, for another 1 minute. The custard might look little watery, but it’s fine. It will set well, while it’s cool down . Do not over cook the custard for too long, it will end up to be thicker and harder custard cream. So watch out your timing during this cooking process (3-4 minutes), in low heat.
You may fill in the puff, with the custard cream, as much as you prefer. The more you fill them up the more tastier it going to be.
