Homemade sauce for our favorite pasta or pizza at home. Should we always depend on ready made sauces from shops? Let’s make our own sauce this time. I learned to make my own pasta/pizza sauce, which is more healthier and cost saving as well. Prepare it in advance, store it in freezer and defrost it whenever you plan to add it in pasta or pizza. The taste may not be exactly similar to the ready made sauces but it is definitely my home choice and will be yours too.
Serve for average 3 – 4 large pizza (toppings)
Ingredients :
- 4 Large tomato
- 1 Tablespoon butter (or olive oil)
- 3 Garlic cloves (chopped finely)
- 1 Onion – small sized (chopped finely)
- 1/2 Cup Hot water (optional chicken stock)
- 1/4 Teaspoon dry oregano leaves
- 1/2 Teaspoon dry basil leaves
- 1/2 Teaspoon black pepper powder
- 1 Teaspoon sugar
- 1/4 Teaspoon chili flakes
- Salt to taste
- Pinch of food coloring (optional)
Let’s make the Sauce :
Prepare the ingredients as required.
Use yellow onion (bawang holland) for the best flavors. If the onion is too large, then use only half (1/2) of it.
It’s optional to use either butter/ margarine or olive oil. I prefer to use butter, as it gives extra kick in the flavor.
Cross cut (x) the skin of the tomatoes as in the picture. Don’t have to be deep cut. Just slice the skin will do.
In a small pot, boil enough water. Once the water is boiling well, add in the tomatoes. It will take about 1-2 minutes, you will notice the outer layer of the tomatoes skin (the x crossed) is peeling off. Turn of the flame and remove the tomatoes to another bowl. Let it cool down, then start peeling off the skin.
Puree the tomatoes in food processor. Adding water is not required.
Heat up the butter in a deep cooking pan. Saute the chopped onion and followed by chopped garlic in medium/low heat. Bay leaves (2pcs) is optional.
Stir and saute them for about 2-3 minutes. The butter and onion/garlic mix will give nice aroma to the sauce.
Then add in the tomato puree. Let the mix cook well. Stir occasionally. The tomatoes puree will start to become a bit dry. At this stage, add 1/2 cup of hot water and let it boil well. Adjust the heat to low and simmer.
It’s optional to add some (about 2 tablespoon) canned tomato puree.
Now it’s time to add other dry ingredients to make right taste of the sauce. Dried oregano (optional to use dried basil), dried parsley, chili flakes, sugar and salt. Adjust the thickness of the sauce according to your preference of use. I prefer to end it as a thick sauce as I am planning to use it for pizza toppings later.
I added a pinch of red food coloring to make the sauce a little attractive. But it’s purely optional as per individual preferences.
The Pasta Sauce is ready. Store it up in a jar and place it refrigerator for 3-4 days consumption. Or place it in freezer, if you plan to consume it within weeks of time period.
