Creamy Tomato Soup

Creamy Tomato soup….. homemade from fresh tomatoes and few other ingredients. It take less than 30 minutes to prepare this dish and you would be amazed with the taste. It’s creamy in taste and goes well with dinner rolls, bread loaf or garlic bread would be a perfect fit.
The recipe serves 2 to 3 person
Ingredients :
- 3 Tablespoon of butter/margarine
- 2 Bay leaves
- 2 Cloves of garlic (coarsely chopped)
- 1 Medium sized onion (coarsely chopped)
- 4 Large red tomatoes (diced)
- 2 Medium size potatoes (diced)
- 2+1 Cups hot water (optional-chicken broth)
- 1/4 Teaspoon black pepper (freshly coarse)
- 1/2 Teaspoon paprika/chili powder
- Salt to taste
- 1 tablespoon heavy cream (or more as per your wish)
Lets Cook :
Crush the garlic and chopped the onion coarsely.
Cube the potatoes and tomatoes into smaller pieces.
In medium heat, warm up the butter. Add the bay leaf, when it’s about slightly sizzle, add in the chopped onions and garlic. Saute those till the onion are soften and translucent (1 to 2 minutes). You may smell the aroma of butter and onion covering your whole kitchen.
Add in the cubed potatoes, fry in the medium heat for about 5 to 7 minutes. Do not add water at this stage. You will notice that the potatoes becoming slightly tender .
Add in the cubed tomatoes and stir well. At this stage , add in some salt, paprika (or chili powder) and freshly crushed black pepper. Stir well.
In medium heat, add in 2 cups of warm water, close the lid and let those simmer. It will take around 10 minutes for the potatoes to cook till soft. Turn off the heat, when the potatoes are well cooked and soft. Let it to cool down for a while (add additional water and cook further if the potatoes are not done yet).
Remove the Bay leaf. Then puree them in the food processor, till it’s creamy.
Then transfer the creamy soup to the cooking pot again and then heat the soup in a very low heat. Adjust the thickness of the soup as per your desire. Or accordingly, add 1 cup of hot water and let it simmer for a short while. Taste check : Add in salt or crushed black pepper if required. Turn off the heat. Finally add the heavy cream and give it a quick stir.
The Creamy Tomato Soup is ready to serve……
Note :
- Remove the bay leaves before puree the soup.
- The soup can be kept in refrigerator up to 2 days. Let the soup completely cooled down and transfer it in airtight container then place it at refrigerator compartment. Heat it up and enjoy the soup whenever your prefer to have it.
